Shrimp & Crab Salad

Mixed greens

2 cups Quinoa spiral pasta, cooked and drained

3 Roma tomatoes, quartered and sliced

1 bell pepper, chopped

1 small bunch broccoli, chopped

4 oz. pepper jack cheese, cubed

10 pitted kalmata olives, halved

1/2 pound baby shrimp

1 large can crab

4 large basil leaves, shredded

Toss with Girard’s champagne vinegar.

Tomato Basil Salad

Romaine leaves, torn

Baby endive, torn

3 Roma tomatoes, chopped

1 Avocado, chopped

2-3 oz. Fresh mozzarella, chopped

6 Basil leaves, shredded

garlic nuggets, to taste

Dressing:

1/2 lime

sprinkle sherry vinegar

drizzle extra virgin olive oil

Salt to taste

Pepper to taste

Tuna Salad with Chives

1 package water packed tuna

Romaine, torn into bite size pieces

1 Roma tomato, halved and sliced thin

1 Avacado, sliced

1/2 oz shaved parmesan

Garlic nuggets, to taste

2 tablespoons sunflower seeds

Large bunch fresh chives, cut

Dressing:

Juice of 1/2 lemon

drizzle extra virgin olive oil

sea salt to taste

ground pepper to taste

Layer ingredients onto a plate starting with the lettuce and ending with the chives, add dressing and enjoy!

Spinach Salad

baby spinach

2 roma tomatoes

1 avacado

garlic nuggets to taste

1/4 cup sunflower seeds

fresh basil, small bunch chopped

fresh basil, 3 large leaves shredded

1 oz. shaved permesan

Dressing:

juice of 1 lemon

drizzle of extra virgin olive oil

sea salt to taste

pepper to taste

Layer ingredients in a large in a large bowl, starting with the spinach leaves and ending with the fresh herbs. Add dressing and toss well.
