Green Salad

Boston lettuce leaves, torn

1/2 cucumber, sliced

1/2 avacado, sliced

1/2 cup green peas

shredded mexican cheese

pecan pieces

Dressing:

1/4 lime

1/2 orange

drizzle pomogranite oil

drizzle extra virgin olive oil

garlic salt to taste

beau monde to taste

celery salt to taste

fresh back ground pepper to taste

Layer ingredients in a bowl, starting with the lettuce and ending with the nuts, add dressing and toss. Serves 2.

Arnie and I had a nice, quiet dinner at Mirabelle last night. The food was fantastic, as always, and the restaurant was quiet enough for us to have a long conversation. He really opened up to me about his life. I could tell that it was difficult for him to talk about himself so openly. He mostly talked about his love life and his fear that he will never find anyone to love again as much as he loved his wife Noelle. He’s been seeing Amy now for awhile, but doesn’t feel anything but friendship for her. He’s such an attractive man, with a romantic heart. I’m sure that he will find someone soon and I told him so.

After dinner it was back to the tables at Harrah’s where Arnie won back some of the money that he lost the night before. He is a fun house guest. I’ll be sorry when he has to leave.

Arnie and I went to Friday’s Station for dinner last night at Harrah’s. He filled me in on his latest case in Virginia….quite interesting. A couple was duped by their close friend who was not only stealing money from them, but poisoning them as well. He should write a book some day!

We hit the tables after dinner, and Arnie lost a bunch. I’m sure that he’s going to want to make it up tonight.

Tuesday night was one that I will always remember, what a fantastic evening. The premier at Royal Albert Hall was elegant and exciting. Attending the event were Daniel Craig, Judi Dench, Penelope Cruz and many other famous celebrities.   Prince Charles and Camilla attended, of course. Martinis were served at the after party, naturally!

It was great to see the gang: Kate, Brian, Elizabeth, James, Catherine and Tom. We didn’t get to spend much time together as they only had one evening in London before heading back to Newcastle. Everyone seems happy and healthy. Kate and Brian are still contemplating a move to the U.S. at some point, but are content where they are for the moment.

I am home now, and Arnie was already here when I arrived. He’s been brushing up on his blackjack. I’m sure that we will be headed to the casinos tonight.

This was a whim, but here I am in London for the premier of Skyfall. As soon as I heard that Kate, Brian and the gang could all meet me in London, it was a no brainer. Looking forward to seeing everyone tonight. Haven’t seen any of them since the wedding. This will be a quick trip, back to Tahoe for the weekend. Arnie is already there, practicing his blackjack. I invited him to come with for the opening, but I think that he is still having a hard time getting over Kate.

Arnie called this morning. Hadn’t talked to him in ages. Sounds like he has been swamped with his FBI training¬† which is quickly coming to a close. He wants to come to Tahoe for a visit before he officially becomes an agent and will probably not get time off for quite a while. I told him that he was welcome to use the house whether or not I’m in town. I’m thinking of heading to London for the premier of the new bond film, Skyfall which opens next week. Arnie’s still seeing Amy, but it doesn’t sound like it’s going anywhere….just two people who share a loss.

Looking forward to seeing him again. We have a lot of catching up to do.

 

 

 

 

 

Apple-Fennel Salad with Chicken

Mixed baby greens

1 fennel bulb, sliced thin

2 small green apples, sliced thin

1 avacado, chopped

1/2 cup walnut pieces

2 oz. shaved parmesan

1/2 cup green peas

1 small package cran-raisins

garlic nuggets to taste

1/4 roasted chicken, chopped

Dressing:

1/2 orange

1/2 lime

sprinkle pomegranate vinegar

drizzle chili pepper infused olive oil

drizzle extra virgin olive oil

sprinkle beau monde

sprinkle celery salt

fresh ground black pepper to taste

pink himalayan sea salt to taste

Layer ingredients in a large bowl, starting with the lettuce and ending with the nuts, raisins and cheese. Add dressing and toss! Serves 2
