Cajun Shrimp Salad

mixed greens

baby arugula

1/2 cup peas

1/2 can Hearts of palm, sliced

1/2 avacado, sliced

2 scallions, chopped

1/4 cup sunflower seeds

small bunch chives, chopped

garlic nuggets to taste

10 large frozen shrimp

garlic olive oil

Cajun seasoning

Dressing:

1/2 lemon

sherry vinegar, drizzle

extra virgin olive oil, drizzle

sea salt to taste

pepper to taste

beau monde, sprinkle

celery salt, sprinkle

Thaw the shrimp in cold water and peel, drain on a paper towel. Place in a bowl with a drizzle of garlic olive oil and a generous amount of Cajun seasoning, coating the shrimp,mix well. Grill on a grill or saute pan until golden brown (2-3 minutes per side on medium heat). Place fresh ingredients in a large bowl, add the dressing and the shrimp. Toss and serve immediately.
