Shrimp Salad
frozen shrimp, thawed and dried with paper towels
romaine leaves, torn
tomatoes, sliced
avocado, sliced
Parmesan cheese, slivered
Deviled eggs:
eggs
mayonnaise
Dijon mustard
dash cayenne pepper
salt to taste
pepper to taste
small bundle chives
Dressing:
juice of 1/2 lemon
drizzle extra virgin olive oil
sprinkle celery salt
Tear romaine leaves and cover the plate or bottom of bowl. Add sliced tomatoes,and avocado. Top with cold shrimp and slivers of Parmesan cheese. Hard boil the eggs, slice in half. Mix egg yokes with mayonnaise and 1/2 teaspoon Dijon mustard. Add the cayenne, salt and pepper, mix well. Fill the eggs and top with fresh chives. Dress the salad with the lemon juice, olive oil and seasonings. Add the eggs to the plate.

Southwest Salad
mixed baby greens
1 red bell pepper, grilled
1 jalapeno pepper, grilled
4 green onions, grilled
2 ears of corn
1 tablespoon butter
red pepper flakes
1 avacado
1/2 cup pecan pieces
1/4 cup fresh cilantro, chopped
garlic nuggets sprinkled generously
Dressing:
1 lime
drizzle pomogranate vinegar
drizzle olive oil
salt to taste
pepper to taste
beau monde, lightly sprinkled
celery salt, lightly sprinkled
Lightly spread the butter on the corn, sprinkle with red pepper flakes and wrap in saran wrap. Microwave for 8 minutes. When cool, cut the corn off of the cob. Grill the bell pepper, jalapeno and green onions with olive oil on the grill or in a grill pan. When cool, chop into small pieces. Layer a salad bowl, starting with the lettuce then add the other ingredients including the cooked vegetables. Add the dressing and toss thoroughly.

Baby Scallop Salad
1/2 pound baby scallops
1/2 teaspoon minced garlic
1 tablespoon butter
mixed baby greens
1 oz. grated parmesan cheese
1 avacado
2 tablespoons garlic nuggets
1/2. green peas
2 medium tomatoes, sliced
1/4 cup pepitas
6 large basil leaves shredded
small bunch chives, chopped
Dressing:
juice of 1 lime
sprinkle sherry vinegar
drizzle olive oil
Gently saute the scallops in the butter and garlic until slightly brown (about 5 minutes on medium heat). Place all fresh ingredients in a large bowl, add the scallops, cheese and pepitas. Finish with the dressing.
