Apple-Fennel Salad
Apple-Fennel Salad with Chicken
Mixed baby greens
1 fennel bulb, sliced thin
2 small green apples, sliced thin
1 avacado, chopped
1/2 cup walnut pieces
2 oz. shaved parmesan
1/2 cup green peas
1 small package cran-raisins
garlic nuggets to taste
1/4 roasted chicken, chopped
Dressing:
1/2 orange
1/2 lime
sprinkle pomegranate vinegar
drizzle chili pepper infused olive oil
drizzle extra virgin olive oil
sprinkle beau monde
sprinkle celery salt
fresh ground black pepper to taste
pink himalayan sea salt to taste
Layer ingredients in a large bowl, starting with the lettuce and ending with the nuts, raisins and cheese. Add dressing and toss! Serves 2
