Shrimp “Snoopy” Salad
10 medium frozen shrimp
Cajun seasoning
jalapeno olive oil
Butter Lettuce, torn
2 eggs, hard boiled, sliced
1 heirloom tomato
1/2 avacado
Dressing:
light champagne
Defrost shrimp in cold water. Wash, peel and dry with paper towels. Warm a saute pan to medium heat, drizzling a small amount of olive oil. Cook 2-3 minutes per side. Add other ingredients in a bowl, add shrimp and a small amount of salad dressing. Toss well. Serves 2.
